Dinner for 2!



Whether it's a first date or you've been together, it's always nice to make dinner for him! It's quite and romantic, and he has to do absolutely NOTHING! Guys always love that :) My advice to you now, is to choose a good "date" food. Italian is always a nice choice because it's so inherently romantic! I have included my favorite Italian recipe below that is a for sure hit! 


CHICKEN SALTIMBOCCA OVER LINGUINE 

Ingredients:
1 lb. linguine
Salt and black pepper (optional)
6 (3 ounce) chicken cutlets, pounded to evenly flatten
1 lb. prosciutto, sliced thin
Fresh sage leaves (can use a sprinkle of dried sage in a pinch)
1 cup all-purpose flour
1 cup chicken stock
1 tbsp. butter
Shredded Parmesan

Directions:
In a large pot, bring salted water to a boil. Add linguine and cook for four minutes. While pasta is boiling, flatten the chicken breasts with a mean pounder. If desired, sprinkle cutlets with salt and black pepper, but this is not necessary, as prosciutto is salty. Top cutlets with a sage leaf. Press one slice of the prosciutto atop each cutlet. Then dust lightly in flour. Set aside. In a skillet over medium-high heat add one cup of chicken stock and one tbsp. butter. Place cutlet in skillet and cook with prosciutto side down until golden brown, about four minutes per side; add chicken stock as needed and simmer 8-12 minutes. Remove chick from heat. Drain pasta and add to the chicken broth in skillet for two minutes. Saute some sage leaves while you assemble pasta and cutlet on a plate. Top with shredded Parmesan and crumbled sage leaves as garnish.
